My first cut into beef was mind blowing. It was like cutting with a laser beam. Made quick work of cubing up a 2 pound cut of beef.The size lends it's self to a push cut more than a rock and chop style.I've been using a 5 inch (170mm) cheap Santoku knife (Not WÜSTHOF brand) for a decade. Kept it sharp and loved the whole time. The instant I held the WÜSTHOF, it was like a light switch flipping. Oh, that's what a knife should feel like. The weight is in the handle and the blade is numble. Even though the knife is a bit pricy. If the edge holds up half as good as the cheap knife set I've been using for the last decade, I'll be happy.
