To start, these knives are quite sharp. First time using the chef's knife and I cut myself (fortunately a minor cut). The chef's knife cut tomatoes quite well, which is a tough thing for a blade that doesn't have a good edge. The bread knife went through bread (Italian) without deforming it at all. I didn't have anything softer to test it on, but I believe it'll cut other bread fine. Haven't really had much call for any other knives so far, but I haven't had them long. These are far, far better than other knives I've bought at local stores in the past.Lots of room for my growing knife obsession.Knife slots are tight so nothing moves around too much.Easy to wipe clean if something spills on it.Shoulder strap is comfortable for carrying to and from work.I didn't attach a photo for the middle slot since I only carry paperwork there.Great gift purchased twiceI purchased this knife set last year because I liked the handle style (it matches well the vintage utensils that I still use) and I was sick of my mismatched "set" of knives that was based on thrift store finds and leftovers that my mom gave me 20 years ago. I was inclined toward Mercer as they are well reviewed as a good budget but professional quality brand, and apparently are a favorite of culinary school students as being acceptable quality but less expensive than Wüsthof or Zwilling. I have to say that my experiences say that that reputation is deserved; if I had to complain about anything it is that after some use I had my more used knives professionally sharpened (at District Cutlery in Washington, DC) and now I like them even better, although that is only a criticism of the factory edge not the knife itself. Currently the only knives that I regularly use that didn't come with this set are an old Chicago Cutlery paring knife which is just a handy size/shape and a Japanese Damascus steel santoku which for some uses I prefer to a chef's knife.Very giftable, and acceptable in culinary arts classes. My Grandson likes them very much.Perfect for 12 inch knives! Holds all the knives I use. You can double up on with the pairing knives in the same pocket. Love the canvas durability!Love my new knife set! Came very sharp and I know they'll last as long as I take care of them never wash them in the dishwasher only by hand.Wife said she wanted a professional set of knives. Saw these being used on one of the cooking shows on PBS. May be the same brand name, but I am sure they are not the most expensive knives sold by this company. They are good knives and should last a lifetime if cared for correctly. The wife loved them. She keeps them STORED in her panty. I have never seen her use them since she got them. Maybe she is saving them for a special occasion or hates them and doesn't want to hurt my feelings. Whatever, the case, I checked them out and they really are nice knives. HUSBANDS BEWARE: When thinking about giving your wives kitchen tools or appliances as gifts, be very careful to select items that cannot hurt you. I took a risk with giving her knives but figured if any of them hit me, I would not have to ever worry about trying to figure out what to buy her again. Problem solved.Love this knife roll. In fact, I should call it a tool roll. Depending on where I’m going or what I’m doing, I’ll pack it with a selection of different kitchen or BBQ tools. It will take a full set of 5 kitchen knifes, honing steel, some spatulas, spoons etc. I would recommend you use blade guards on your sharps, Mercer do simple plastic ones that are cheep.It will also carry BBQ tools including a wide bladed spatula/flipper up to a 460mm total length.There are a couple of netted and velcro’d pockets on the outside of the protective flap which can hold stuff like speed peelers, small tongs, can opener, brushes and stuff like that.The roll itself is a good weight/quality, it has a descent strap and good capacity for me. The elasticated knife pockets are a good size for a chef knife sized handle but you can easily stuff a pairing knife and a utility knife into one pocket. The two velcro straps have plenty of adjustment so you can stuff quite a bit of gear in.If it could be improved, add a carry handle to the outside and improve the netted pockets but that’s nitt picking. Good roll, recommend.I am a professional chef and I used a lot of rolls and knives cases.It is alright for beginners, a lot of room to keep your knives and gadgets however you will need knife guards to protect the blade of your knives so the knives does not hold when you move the case.I would recommend that item to some one that need to keep a lot of knives for the everyday chef operation but if you are looking for something more permanent this is not what you are looking for.After three weeks of use the shoulder strap broke, it would be nice to get a replacement from the company but no chance to reach them.If I would need to buy a knives case again I would buy a different one that could be more resistance and hold the knife better.Product has enough compartments to house all chefs needs on the go... and that is the only plus.I am professional chef and have used this bag for a couple of months.. if you care for your knives at all.. don’t buy!!Every time I put my knives away into the slots and carry the bag, when I open the knives after traveling all the knives and tools have come out of their elastic slots, which when opening turns into a knife fight scene.Now zip pull has brokenOn first glance a great product, reality is very different, if you have invested in good knives invest in a great knife bag too... wusthoff in my opinionBest knives I've ever owned, come well packaged and presented too.
