I just turned 60 and I've been cooking passionately since I was about 25.I've been trying to learn little by little as much as I can about every aspect and preperation of gourmet cooking.I have taught myself with lots of practice on using Japanese water stones (wet stones) on my less expensive knives before I purchased These works of art.This is my 3rd Miyabi knife with 1 more on the way, then I'm done.All I have to say is Oh My Gaaaaaad.... these knives are absolutely the Best I've Ever used! They are lightweight and comfortable to hold.They are deadly sharp and slice through anything like butter.I wish I could buy more but I've already spent my quota for the year.Maybe Miyabi would send me the Birchwood pairing knife to complete my collection of perfection.I Highly recommend Miyabi knives.I've done my research and these are by far the Best knives ever.With all that said....This knife is Way smaller than it looks in the picture.It's great for slicing mushrooms and tomatoes.
