I have used my 10" Wusthof chef's knife for 20 years but this new Santoku is my new favorite knife:-very sharp-stuff doesn't stick to the blade due to the dimples-blade is flat to the tang unlike my chef's knife which is now curved. That means I can chop a tomato anywhere along the blade and completely cut it whereas my Chef's knife would require me to keep objects no closer than half way to the tang.-really like the sharpenerThis won't be my last Santoku knife
