I have multiple knives from the Shun brand. They all arrive razor sharp and hold edges well and are comfortable and effective. The fact that I have had my original Shun knife set for 20 years, and I am still buying more of their products should tell you something. Always hand wash and dry quality products like this. I unpackaged mine 10 minutes ago, and it is already in my knife block ready to use.
