This is the sharpest knife I have ever owned, and as a professional chef,that says something. I purchased this knife because of the blade lineage. Didn't think I would be a fan of how wide the other lines blades were. Let me say, my daily cutting tasks are so effortless using this blade. And I have used it daily for 3 months. Put it to a steel twice, for really no reason, I found out. Light, easily manuvered, cuts everything I need it to with exceptional precision. Did I mention it is sharp and stays that way?
