Kikuichi is the only knife manufacturer today that can trace its roots back over 700 years with a legacy as a true samurai swordsmith. The Kikuichi Elite Carbon Steel knives are made of soft high carbon steel which makes for a sharp, sturdy and easy to sharpen knife, but require a little more care than stainless steel knives. We like this knife because it stays sharp for extended periods and is easier to sharpen than stainless steel blades. The high carbon steel will tarnish or develop a patina over time, so proper care is important. While improper care will lead to discoloration, the knife will continue to perform as normal. Be sure to hand wash the knife and dry after use to prevent rusting. Handmade by Kikuichi's craftsmen in Japan.
