I've used a LOT of cooking knives: German ones, Japanese ones, random supermarket ones, a lot.While I prefer using my Miyabi 6" gyutoh/chef's knife, the Global chef's knife is also an amazing product.It's SUPER light, and for my hand size the bolster is quite comfortable. Extended times spent cutting by pinch gripping does cause the "chef's calus" area on the index finger to flare up, but most knives do this to my hand—my Miyabi one does not strangely. Another bonus is that has a sharp edge right out of the box.There's no reason to not give this knife 5-stars, so voilà.
